The trip begins in Mexico City, but you'll quickly make the transfer to Querétaro, a city known for its well-preserved Spanish colonial architecture. From there, you'll continue onto the UNESCO-listed Franciscan missions in the Sierra Gorda of Queretaro, then overnight in San Miguel Allende. Make a stop at the 'The Sistine Chapel of America' in Atotonilco on your way to Zacatecas, a city founded in 1546 after the discovery of a large silver lode. Take a break in Tequila to learn how Mexico's most famous spirit is made, then continue on to Morelia and the Monarch Butterfly Biosphere Reserve.

Midway through the trip, return to Mexico City for a full day of sightseeing. Then continue on to the Costa Esmeralda for some relaxing time on the beach, making a stop at Veracruz to see the pre-Hispanic city of Tajin along the way. Pass through Tehuacán-Cuicatlán Valley, offering the richest biodiversity in North America, en route to Oaxaca City. This adventure is neatly divided into two parts. The first week happens in Chiapas: you'll start with a boat ride along the breathtaking Sumidero Canyon, spotting spider monkeys and waterfalls. Continue on to El Chiflón waterfalls, the tallest in Chiapas. Visit a pair of indigenous villages in the highlands before seeing Agua Azul waterfalls and the towering Misol-Há waterfall. Start with an empty stomach in Mexico City. Grab some tacos on your way to the National Anthropology Museum, then go on a food-focused tour of the city that takes you to marketplaces and hole-in-the-wall restaurants. Enjoy traditional snacks while floating down the Xochimilco canals on a traditional boat. Visit Frida Kahlo's house in Coyoacán before wrapping up the Mexico City portion of the trip and moving onto nearby Puebla for a walking tour and cooking class. On day six, you'll go on a dedicated antojitos (snacks) tour of the city.

The second week of the trip takes you to Oaxaca, one of Mexico's foodie capitals. Take a food tour of the city's bustling marketplaces and food shops, then side-trip to the nearby countryside to see a 2,000-year-old tree and visit picturesque Hierve el Agua. After a cooking class with a local chef, you'll venture to the Northern Highlands of Oaxaca. Take a jam-making workshop in a local community, Latuvi, and visit a farm in Benito Juarez to learn about the production of local specialties.
